Our Hojiblanca variety, also known as Intense Green Fruity, is the most popular of our references, and comes from the area bordering the Sierras Subbéticas Natural Park in Córdoba.
Harvested in mid-October, the resulting olive oil is characterised by its high intensity and balanced pungency and bitterness, which make it pleasantly persistent on the palate. Aromas of green apple, fresh grass and bitter almond stand out, and on the whole, it’s very well-balanced.
As the olives are harvested so early, removing them from the tree is a more complicated process, therefore part of the harvesting has to be done by hand, and this results in a very limited production.
🍲 Highly recommended for dressing salads along with lemon. Use on fish, meat, grilled octopus and of course, on tomato and mozzarella Caprese salad.
