DO Arbequina mild green fruity 100 ml.
The mildest of our varieties comes from the area bordering the Sierras Subbéticas Natural Park, in Córdoba.
Considered the most delicate of all the Spanish varieties, the sweet Arbequina olive has practically no pungency or bitterness. Its a popular choice with amateur cooks and professional chefs, as its mild intensity adds flavour without affecting the taste of the ingredients themselves. The Arbequina olive produces fruity oils that are smooth and sweet, with aromas reminiscent of pureéd fruit and fresh almonds.
🍲 Ideal for making aioli and other cold sauces, it also goes wonderfully with Sherry or balsamic vinegars. Perfect for baking, as well as for making gazpacho, ajoblanco and salmorejo.

An explosion of Mediterranean sensations that can only be achieved by blending an early harvest Arbequina Extra Virgin Olive Oil with sun-dried tomatoes and fresh basil picked at dawn next to our facilities in Vega de Antequera.
By using the low-temperature infusion technique, we manage to preserve the healthy properties and organoleptic qualities of the Extra Virgin Olive Oil. Along with the aromas of the fresh basil and the tomatoes, slowly dried in the sun, the end result is a remarkable oil, which has undoubtedly become our star product.
🍲 Its so versatile you can use it with any type of cheeses, pasta and risottos, or green tomato salads. It also gives a surprising twist to seafood or grilled white meats.

DO Hojiblanca intense green fruity 100 ml.

Our Hojiblanca variety, also known as Intense Green Fruity, is the most popular of our references, and comes from the area bordering the Sierras Subbéticas Natural Park in Córdoba.
Harvested in mid-October, the resulting olive oil is characterised by its high intensity and balanced pungency and bitterness, which make it pleasantly persistent on the palate. Aromas of green apple, fresh grass and bitter almond stand out, and on the whole, its very well-balanced.
As the olives are harvested so early, removing them from the tree is a more complicated process, therefore part of the harvesting has to be done by hand, and this results in a very limited production.
🍲 Highly recommended for dressing salads along with lemon. Use on fish, meat, grilled octopus and of course, on tomato and mozzarella Caprese salad.

The very first of our flavoured oils, made by cold-pressing Arbequina olives and fresh organic lemons from the Guadalhorce Valley in the province of Málaga.
The olives harvested next to the mill are pressed with the citrus fruit within an hour of harvesting. The result is an oil with the characteristic fruitiness of early Arbequina and the bitter, powerful aromas of the lemon peel and flesh. We like to call this oil, like the rest of our citrus oils, "Extra Virgin Oil of Lemons and Olives".
🍲 Excellent for dressing meat and fish tartares and carpaccios, as well as tiraditos and ceviches, or grilled white meats.

Extremely spicy, what makes it stand out from other spicy oils is its fresh flavour, as fresh chilli peppers are used rather than dried, adding aromas that other oils lack.

For the elaboration of our Mildly Fruity Hojiblanca oil, harvested in November, its infused at a low temperature with purple garlic, dried bay leaf, and fresh rosemary and thyme from Vega de Antequera.
By using a low-temperature infusion technique, the healthy properties of the Extra Virgin Olive Oil are preserved, as well as the organoleptic qualities of an oil with mature notes that harmonise perfectly with aromas of fresh garlic and some of the most typical Mediterranean herbs.
