The Pajarera olive is undoubtedly Cordoba’s most emblematic variety. It’s said that when ripe, its olives are so sweet that even birds like pecking at them.

The olive oil produced from this variety is delicate and fruity, with a moderate bitterness and a spicy touch that makes it very pleasant on the palate, with hints of tomato, apple, exotic fruits and bitter almond, among others.

Due to its fatty acid composition, Pajarera olive oil is classified within the range of delicate oils, so it’s often blended with other varieties, such as Picual or Hojiblanca. However, we offer it in its purest state, with no added varieties, so that you can find out for yourself why this is one of our favourites.

The Picudo or Picuda olive is undoubtedly one of Córdoba’s most exemplary and is protected by the registered Designation of Origin; Baena and Priego de Córdoba. Its name comes from its characteristic curved pointed tip and it is also known as the pajarero (for birds) in the town of Luque, supposedly because when the olives are ripe their oil is so sweet that the birds flock to peck away at them.
The flavour of its oil is soft, fruity and rounded with hints and of exotic fruit, tomato, apple or even almond. This oil is considered very delicate due to its composition of fatty acids, which is why it is normally blended with other varieties such as Picual or Hojiblanca olives.
We have nonetheless chosen to present it in its purest form, without any other added variety, to enable you to discover why this ranks among our favourite olive oils.
