Harvesting begins in early November, during the daylight hours so as not to disturb the wildlife in the olive groves. Immediately after harvesting, the olives are transported clean to the oil mill, where their juice is obtained via cold extraction.
On the nose: Medium-high fruity aroma of green olives with herbaceous notes of freshly cut grass, olive leaf, vegetables (green tomato), green fruit (banana, apple, almond) and wild herbs.
On the palate: Elegant entry with a progressive medium bitterness and spicy chilli pepper in balance. Aftertaste with slight astringency and notes previously perceived in the nose. Banana peel stands out, together with spicy and horticultural notes. Complex, balanced, harmonious and persistent EVOO.
