Due to the early harvest in the first week of October, this oil stands out for its intense, complex and balanced profile. It’s characterised by its intense notes of green olives and aromas of freshly cut grass, wild plants, vegetables, tomato and artichoke.
The flavour lingers pleasantly in the mouth, progressively high in bitterness and spiciness, but well-balanced.

Our second Hojiblanca in the family is also an intense green fruity, but unlike the first, it has the bitterness characteristic of a young olive collected in the first weeks of harvest in October.
